軽井沢：小諸市三岡特産「浅間水蜜桃」使った丸ごと桃スイーツ、8月10日より販売開始

ケーキ「まるごとピーチ」イメージ

長野県の「軽井沢プリンスホテルウエスト」は8月10日〜9月中旬頃まで、「ALL DAY DINING LOUNGE/BAR Primrose」にて、小諸市特産の「浅間水蜜桃（あさますいみつとう）」を丸ごと1個使ったケーキ「まるごとピーチ」を販売する。価格は税込み950円。

「まるごとピーチ」は、浅間水蜜桃のブランド化を進める小諸市とともに地産地消の取り組みを行う軽井沢プリンスホテルが共同で開発。例年8～9月に最盛期を迎える小諸市産の浅間水蜜桃を使った冷たいスイーツ。丸ごと1個コンポートにした桃の中に濃厚なカスタードクリームを詰め、肉厚で香りの高い旬の桃を楽しめる。

軽井沢プリンスホテルのシェフ・パティシエ長田和也が考案し、コンポートシロップにパッションフルーツを加えて酸味をプラスすることで、桃の甘味を引き立たせている。

さらに2024年は、コモロ産のオーガニックバニラビーンズを焚き上げ、濃厚なカスタードクリームにして詰め込んだ。
